Our take on cooking
recipes of the abbaye
We source all of our ingredients locally to ensure that they are fresh, in season, tasty, unique and true to regional flavours. This makes our menu as varied and seasonal. This pretty much sums up our cooking style.
Buying good products is the key. This may seem simple, but can often become complicated if precise ingredients are required. For this reason we don’t have a set menu and we often decide the same day what will be served at the hosts’ table, depending upon the fresh ingredients available.During the peak season our suppliers anticipate our demand.
the vegetable and herb garden
The vegetable and herb garden are Saskia’s area. Every spring the ground is prepared and new and interesting varieties of fruits and vegetables are planted. Right next to the kitchen is the herb garden. There are also various fruit trees (apple, quince, cherry, grape and walnut) as well as berry bushes (raspberry, blueberry, currents and kiwi) that are carefully pruned every winter.
our local and regular suppliers
Our local suppliers are the key to the success of the delicious dishes served at l’Abbaye du Palais. For this reason, we would like you to know some of them
cookery courses and clinics
We enjoy sharing our passion with others, and often our guests come and help us out in the kitchen. Would you like to step into Martijn’s shoes for an evening? It is possible! Or would you like to do a 5 day cooking program? That is also possible! See the packages below.Would you like to come as a group and have specific needs? Call us; send us an email, to construct your own personalised cooking holiday.
Below are some of the recipes of our dishes served at l’Abbaye. These are either our own recipes we carefully invented, or “borrowed” honestly from cookbooks, then tweaked to make them our own.
